Acorn squash can take up to 45 minutes to roast in the oven; cook it in the microwave for only 10 minutes to speed up the process without sacrificing the dish's sweet and savory qualities. This recipe takes 10 minutes to cook a small squash; if you have a giant squash, the cooking time must be increased until the squash is fork tender.

Ingredients

  • 1 small Acorn Squash

     

     

     

  • 2 tablespoons Water

  • 2 tablespoons Unsalted Butter 

  • 2 tablespoons Brown Sugar 

  • 1/4 teaspoon Ground Cinnamon 

  • 1/4 teaspoon Sea Salt 

  • A pinch of Ground Black Pepper 

Instructions

Start by cutting the squash in half, scooping out all the seeds and fiber from the center of the squash using a large spoon. 

Prepare squash

Use a baking dish that will fit inside the microwave, pour in the water placing the squash cut side down into the baking dish. Microwave on high for 5 minutes.

While the acorn squash is cooking, mix the butter, brown sugar, cinnamon, salt, and pepper in a small mixing bowl.

Remove the baking dish from the microwave, flipping the squash over. 

Taking out the squash from the oven

Use a pastry brush to coat the inside and edges of the squash with the butter mixture. Cook in the microwave for another 5 minutes until the squash is fork tender.

Transfer the squash to a cutting board, you can choose to either slice the squash into pieces or scoop the squash out with a spoon mashing the squash up a little with a fork.
