This Keto Tomato Soup is a must-try when it comes to keto recipes. Instead of using plain old tomatoes found in the grocery stores produce department or canned tomatoes, we used heirloom tomatoes. Heirloom tomatoes are juicy, meaty, and not too acidic, making them perfect. We even took this keto recipe further by roasting them to intensify their sweet flavor. Ingredients

  • 2 pounds Heirloom Tomatoes, cut

  • 1 Onion, quartered

  • 2 cloves Garlic

  • 2 sprigs of Thyme

  • 3 tablespoons Olive Oil

  • 1 teaspoon Salt

  • 1/2 teaspoon Pepper

  • 1 teaspoon Italian seasoning

  • 1 1/2 cups Chicken Broth

  • 1/2 cup Heavy Cream 

Instructions

Preheat oven to 450 °F. Place the heirloom tomatoes, onions, garlic, and thyme into a large baking dish.

 

Add the olive oil, salt, black pepper, and Italian seasoning to the tomatoes. Toss to combine.

Bake heirloom tomatoes in preheated oven for 15-20 minutes until softened.

Place the heirloom tomatoes in a large soup pot. Add chicken broth and cook over medium-high for 10 minutes.

Place the tomato soup in a high-speed blender and blend until smooth in batches. Stir in heavy cream. 

Garnish tomato soup with heavy cream and fresh basil before serving.
