All you have to do is toss them with oil and seasonings, and you will have a yummy dinner filled with plenty of charred, smoky flavor. Serve these cauliflower steaks with zesty quinoa salad, grilled green beans, or steamed vegetables to make the meal even more delicious and filling.

Why do you soak cauliflower before cooking?

Soaking cauliflower in salt water for 30 minutes removes any worms or insects that may be hidden in the crevices of the cauliflower.

How do you cut cauliflower into steaks on the grill?

To cut cauliflower steaks for grilling, place the cauliflower head on a cutting board. Cut the stem from the head of the cauliflower using a chef's knife and then place it stem side down on the cutting board. Carefully cut the cauliflower in half. Cut each cauliflower half in half once again to make 4 cauliflower steaks that are 3/4-1 inch thick.

Ingredients

  • ¼ cup Olive Oil

  • Zest of 1 Lemon

  • Juice of 1 Lemon

  • 2 Shallots, minced

  • 2 cloves Garlic, minced

  • 1 teaspoon Kosher Salt

  • 1 teaspoon Smoked Paprika

  • 1 teaspoon Brown Sugar

  • ½ teaspoon Chili Powder

  • 1/2 teaspoon Ground Turmeric

  • 1/4 teaspoon Black Pepper

  • 1/4 teaspoon Cayenne Pepper

  • 2 large heads of Cauliflower, leaves removed, cut into 1-inch steaks

  • 2 tablespoons fresh Basil, minced

Instructions

Set up your grilling machine or grill pan, brush the grates with oil, then preheat it to 400 °F.

Prepare grilling pan

Put the olive oil, lemon zest, lemon juice, shallots, garlic, kosher salt, smoked paprika, brown sugar, chili powder, turmeric, black pepper, and cayenne pepper in a small bowl. Whisk to combine.

Prepare grill seasonings

Next, arrange the cauliflower steaks on a baking sheet in an even layer. Brush both sides of each cauliflower steak with the seasoning mixture.

Transfer the cauliflower steaks to the grill. Cook them for 5 minutes.

Put cauliflowers in the grilling pan

Brush the cauliflower steaks with the seasoning mixture again, then flip them over. Cook the cauliflower steaks for 5–7 minutes until they are tender and slightly charred.

Brush the cauliflower steaks with the remaining seasoning mixture, then place them on a serving platter and garnish them with basil.
