Instead of a mayonnaise-based dressing, this potato salad is made with Greek yogurt to lighten things up; feta cheese, red onions, fresh herbs, lemon juice, and lemon zest for a tangy fresh flavor. It pairs perfectly with Instant pot BBQ chicken breast, grilled pork tenderloin, or grilled turkey steaks.

Ingredients

  • 1 pound Baby Red or Gold Potatoes, halved

  • 1 1/2 teaspoons Kosher Salt

  • 1 cup fat-free plain Greek Yogurt

  • 3 tablespoons Fresh Parsley, chopped

  • 2 tablespoons Fresh Dill, minced

  • Zest of 1 Lemon

  • Juice of 1/2 Lemon

  • 2 Garlic Cloves minced

  • 1 tablespoon Capers, drained

  • 1/2 teaspoon Black Pepper

  • 1/2 medium Red Onion, thinly sliced

  • 1/3 cup Feta Cheese crumbled

Instructions

Place the potatoes into a pot. Fill it with enough water to cover the potatoes. Add 1 teaspoon of kosher salt, then place the potatoes over medium-high heat and let them come to a boil.

Prepare potatoes for cooking

Once the water comes to a boil, decrease the heat to medium-low and cook the potatoes for 8–10 minutes until they are fork-tender.

Cooking potatoes

Drain the potatoes in a colander, then spread them out on a baking sheet in an even layer. Let the potatoes sit for 5 minutes. Cover and freeze the potatoes for 10–15 minutes until they are cold.

Draining the potatoes

Add the Greek yogurt, 2 tablespoons of parsley, 1 tablespoon of fresh dill, lemon zest, lemon juice, garlic, capers, black pepper, and the remaining 1/2 teaspoon of kosher salt into a large bowl and mix to combine.

Prepare salad dressing

Add the potatoes, 3/4 of the red onions, and 1/4 cup of feta cheese, and mix to combine. Place the Greek potato salad on a serving dish and sprinkle the remaining feta cheese, red onions, parsley, and dill on top before serving.
