Ingredients

  • 1 tablespoon Olive Oil

  • 1 tablespoon Butter

  • 1/2 medium Yellow Onion, diced

  • 2 medium Leeks, thoroughly washed, diced

  • 1 Bay Leaf

  • 1 teaspoon fresh Thyme

  • 2 teaspoons fresh Chives, minced

  • 2 cups Fish Broth

  • 1 1/2 cups Water

  • 1 teaspoon Kosher Salt

  • 1/2 teaspoon Black Pepper

  • 1 pound Yukon Gold Potatoes, peeled, cut into 1/2-inch pieces

  • 1/2 cup Clam Juice

  • 1 pound Cod fillets, cut into 1-inch pieces

  • 1 cup Heavy Cream

  • 2 tablespoons fresh Parsley, roughly chopped

  • 2 tablespoons fresh Tarragon, roughly chopped

  • 3 medium Scallions, white parts only, chopped

  • 2 tablespoons Lemon Zest

  • 1 Lemon cut into 4 wedges

Instructions

Place the olive oil and butter in a Dutch oven. Set it over medium-high heat.

Add the yellow onions and leeks and cook them for 4 minutes until they start to soften.

Add the bay leaf, fresh thyme, and chives. Cook it for 1 minute until fragrant.

Add the fish broth, water, kosher salt, black pepper, and potatoes, stir to combine, and cook for 15 minutes until the potatoes are tender.

Add the clam juice and stir to combine. Then carefully add the cod fillets to the soup, decrease the heat to low, and cook it for 4–5 minutes until the cod is tender and flaky.

Turn off the heat, then stir in the heavy cream.

Divide the cod soup between 4 bowls.

Mix the parsley and tarragon in a small bowl, then garnish each bowl of soup with the fresh herbs, scallions, lemon zest, and a lemon wedge.
