Ingredients

  • 4 boneless skinless Chicken Breasts

  • 1/2 cup shredded Mozzarella Cheese

  • 5 tablespoons chopped Basil, divided

  • 1 1/2 teaspoons Kosher Salt

  • 1 teaspoon Black Pepper

  • 1 teaspoon dried Oregano

  • 2 tablespoons Olive Oil

  • 1/2 medium Red Onion, diced small

  • 4 Garlic cloves, minced

  • 1 tablespoon Tomato Paste

  • 1 cup crushed Tomatoes

  • 1 cup low-sodium Chicken broth

  • 1 cup Heavy Cream

  • 1/2 cup grated Parmesan cheese

  • 4 sprigs fresh Basil for garnish

Instructions

Place 1 chicken breast onto a cutting board. Use a paring knife to cut a horizontal slit into the chicken breast. Do not cut all the way through. Set the chicken breast aside and repeat these steps with the remaining chicken breasts.

Prepare the chicken breast

Add 1–2 tablespoons of mozzarella cheese and 1 tablespoon of basil to the cavity of 1 chicken breast. Use 1–2 toothpicks to seal the filling inside the chicken breast. Repeat with the remaining chicken breasts.

Next, season the chicken breasts with 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and oregano.

Then put olive oil in a large skillet and set over medium-high heat.

Put the chicken breasts in the skillet in an even layer and sear them for 4–5 minutes per side until golden brown.

Take the chicken breasts out of the skillet and place them onto a plate.

Set aside the chicken and place on a plate

Turn the heat to medium-low. Next, add red onions and garlic to the skillet. Cook for 2 minutes.

Add the remaining basil and cook for 1 minute. Next, add the tomato paste and cook for another minute.

Add the crushed tomatoes and cook for 3 minutes.

Add chicken broth, heavy cream, and the remaining salt and black pepper. Stir to combine, and let the tomato basil sauce come to a simmer.

Gradually add Parmesan cheese, stirring until fully incorporated into the sauce.

Next, add the chicken breasts back to the skillet. Cook them covered for 8–10 minutes until they have reached an internal temperature of 165 °F.

Garnish the chicken tomato basil with the sprigs of basil and serve with instant pot brown rice if desired.
