Ingredients

  • 2 cups Water

  • 1 large head Cauliflower, cut into florets

  • 1 cup freshly grated Parmesan cheese

  • 1/2 teaspoon Garlic Powder

  • 1/2 teaspoon Onion Powder

  • 1/2 teaspoon Smoked Paprika

  • 1/2 teaspoon Italian seasoning

  • 1 teaspoon Dried Parsley

  • 1/4 teaspoon Kosher Salt

  • 1/4 teaspoon Black Pepper

Instructions

Place the water in a large pot and set it over medium-high heat.

When the water comes to a simmer, place a steamer basket over the pot, add the cauliflower, and steam it for 10–15 minutes until it is tender.

Remove the cauliflower from the stove and place it in a food processor. Pulse until it resembles fine breadcrumbs.

Let the cauliflower cool for 15 minutes until it is cool enough to touch.

Place the cauliflower into a cheesecloth and squeeze as much of the water from it as you can.

Place the cauliflower in a large bowl and add the Parmesan cheese, garlic powder, onion powder, smoked paprika, Italian seasoning, parsley, kosher salt, and black pepper and mix until combined. Preheat your oven to 425°F.

Scoop the cauliflower dough onto a parchment-lined baking sheet 1 inch apart, using a 2-tablespoon cookie scoop.

Next, roll each scoop of dough into a ball. Place it back on the baking sheet and flatten it into a 1-inch-thin round.

Bake the cauliflower chips for 15–17 minutes until golden brown.

Let the cauliflower chips cool completely. Use a spatula to remove them from the baking sheet and place them onto a serving platter.
