Using a wok or large deep skillet on high heat add peanut oil and bring to a smoking heat
Add the ginger, onion, garlic, bell peppers, celery, carrots, and cook for 5 minutes.
Mix in the beef and cook for 5 minutes, mix with the vegetables.
Using a wooden spatula, toss and mix in the rice and cook for another 5 minutes.
Add sesame oil and soy sauce, mix until the rice turns brown.
Make a space in the wok by moving the rice mixture to the side, then add the beaten eggs in that space and scramble cook until done, then toss and mix with the rest of the ingredients.
Cook for another 3 minutes and mix in white pepper.
Remove from the heat and serve in serving plates with some green onion on top and enjoy.
