Risotto can be complicated, especially when you make it on the stove. That's why you should make risotto in the microwave. It is much less complicated since you don't have to add broth to the risotto and stir it gradually. The risotto only takes 25 minutes to make, and it is filled with delicious flavor, which comes from parsley, lemon zest, juice, aromatic shallots, bell peppers, onions, and salty parmesan cheese. Ultimately, you will have the perfect lemony, cheesy Microwave Risotto to die for. 

 

Can you microwave risotto?

Yes, you can microwave risotto. The trick is adding a bit of moisture in the form of wine, broth, or water to prevent it from drying out as it reheats in the microwave.

Ingredients

  • 4 tablespoons Butter

     

  • 2 Shallots, minced 

     

  • 1/2 Small Red Bell Pepper, minced 



     

  • 2 cloves Garlic, minced

     

  • 1/4 teaspoon Ground Black Pepper

     

  • 1 cup uncooked Arborio Rice

     

  • 2 1/2 cups of Low-Sodium Chicken Broth 

     

  • 1/2 cup shredded Parmesan Cheese

     

  • 2 tablespoons Parsley, minced  

     

  • Juice of 1 Lemon 

     

  • Zest of 1 Lemon 

Instructions

Place 2 tablespoons of butter, shallots, red bell pepper, and garlic in a 2-quart microwave-safe dish. 

 

Prepare butter, onions, bell pepper and garlic

Cover it tightly with plastic wrap and heat it in the microwave for 3 minutes until the onions and bell peppers are soft.

Add the arborio rice to the dish and stir to coat it in the butter. Cover it with plastic wrap and set it aside. 

 

Adding rice

Place the chicken broth into a 4-cup microwave-safe glass measuring cup. Heat it in the microwave for 3–4 minutes until it is hot. 

 

Prepare chicken broth

Add the chicken broth to the arborio rice and stir to combine. Cover the arborio rice tightly with plastic wrap and heat it in the microwave for 6 minutes.

Stir the arborio rice and cover it tightly with plastic wrap, and microwave it for 10–12 minutes until the arborio rice is tender.  

 

 Microwave the Risotto

Stir in the remaining butter, parmesan cheese, one tablespoon of parsley, lemon juice, and most lemon zest.

Pour the risotto into a serving bowl and top with the remaining parsley and lemon zest before serving.
