Chicken Cacciatore originated in Italy during the 14th century or the renaissance period. Chicken Cacciatore translates to "chicken hunter."  Unlike traditional Cacciatore, this Cacciatore is cooked in an Instant Pot and is also keto.

We seared the chicken drumsticks until golden brown in keeping with its Italian roots, then simmered them in a white wine chicken broth sauce. Of course, no Cacciatore is complete without olives, but we added capers for a tangy, salty flavor. We also added fire-roasted tomatoes, tomato paste, and rosemary to enhance the taste of the Chicken Cacciatore further.

Ingredients

  • 2 tablespoons Olive Oil, divided

  • 8 Chicken Drumsticks 

     

  • 1/2 teaspoon Salt

     

  • 1/4 teaspoon Black Pepper

     

  • 1 medium Yellow Onion, sliced into 1/4-inch pieces

     

  • 3 Garlic cloves, minced

     

  • 2 teaspoons Italian Seasoning

     

  • 1 teaspoon fresh Rosemary

     

  • 1 teaspoon fresh Thyme leaves

     

  • 1/4 cup White Wine

     

  • 3/4 cup Low-Sodium Chicken Broth

  • 2 tablespoons Tomato Paste

  • 1 (15oz) can Fire-Roasted Diced Tomatoes

     

  • 1 cup Black Olives 

     

  • 2 tablespoons Capers

Instructions

Set Instant Pot to sauté. Place a tablespoon of olive oil into the Instant Pot. 

Coat the chicken drumsticks with salt and pepper on all sides.

 

Add the chicken drumsticks to the Instant Pot and cook them for 2-3 minutes per side until golden brown. 

Place the chicken drumsticks onto a plate and set them aside. 

Add the remaining oil to the Instant Pot and add the onion. Cook for 1-2 minutes until the onion is translucent. 

Add the garlic, Italian seasoning, rosemary, and thyme and cook for 1 minute until fragrant.

Add the white wine and deglaze the Instant Pot by running your cooking spoon on the bottom of the Instant Pot to release the browned bits of food.

 

Add the chicken broth, tomato paste, diced tomatoes, olives, and capers, and stir to combine.

Return the chicken drumsticks to the Instant Pot. Place the lid on your Instant Pot and set the valve to seal. Select the Pressure Cook setting and let the Chicken Cacciatore cook for about 12-15 minutes. 

Once the chicken drumsticks are done pressure-cooking, allow the Instant Pot to release its pressure naturally. Do not touch the pressure valve, or you will get burned. The pressure is released when the pressure valve pin is down.

Once the pressure releases, open the Instant Pot's lid. Make sure you open the lid away from you, so you do not get hit with a cloud of steam.

 

Allow the Chicken Cacciatore to sit for 5 minutes before transferring it to a serving dish.
