Ingredients

  • 2 1/4 cups Gluten-Free All-Purpose Flour

  • 2 ½ teaspoons Baking Powder

  • 1/2 teaspoon Baking Soda

  • 1 tablespoon Granulated Sugar

  • 1 teaspoon Kosher Salt

  • 1/2 cup Unsalted Butter, cold, cut into cubes

  • ¾ cup Buttermilk

  • 4 tablespoons Butter, melted, for brushing

Instructions

Preheat the air fryer to 390 °F.

Whisk the gluten-free all-purpose flour, baking powder, baking soda, sugar, and kosher salt in a large bowl until combined.

Add the butter and use two knives or clean hands to rub it into the dry ingredients until it resembles coarse sand.

Next, add the buttermilk. Stir it gently with a wooden spoon until a soft dough forms.

Dust your countertop with gluten-free flour and turn the biscuit dough on your countertop.

Press the biscuit dough into a rectangle, then fold it like a letter. Flatten it slightly into a rectangle.

Repeat step 6 twice, then flatten the biscuit dough into a 1-inch thick rectangle.

Use a 3-inch biscuit cutter to cut the biscuit dough into 13 biscuits.

Line the air fryer basket with a parchment liner. Place 6 biscuits in the basket. Air fry the biscuits for 9–11 minutes until they are golden brown. Cook the remaining biscuits in batches for 9–11 minutes until all the biscuits are cooked.

Remove the biscuits from the air fryer, place them on a serving platter, and brush them with melted butter before serving.
