Regular mashed potatoes are good, but whipped sweet potatoes are A.M.A.Z.I.N.G. They are so easy to make. These Vegan Whipped Sweet Potatoes are creamy, savory yet slightly sweet, and full of flavor. Best of all, since the sweet potatoes are made in a stand mixer, there's no need to pull out your potato masher; the mixer does all the hard work. First, boil the sweet potatoes until tender, then whip them in a stand mixer with almond milk, seasonings, and vegan butter until they are creamy and smooth. Serve with our homemade Cranberry Sauce.
How do you thicken whipped sweet potatoes?
Add a little cornstarch to the whipped sweet potatoes. Cornstarch is gluten-free and thickens better than flour. To thicken whipped sweet potatoes, add the cornstarch a tablespoon at a time until it thickens to your desired consistency.
Is it better to bake or boil sweet potatoes?
It's better to boil sweet potatoes. That's because when you cook the sweet potatoes, fewer antioxidants and vitamin A are lost compared to baking. Also, the glycemic index of cooked sweet potatoes is half that of baked sweet potatoes, resulting in fewer blood sugar spikes when eating them.
Should you peel sweet potatoes before boiling?
Peeling sweet potatoes before boiling them is not necessary. However, if you leave the peel on, the sweet potatoes will take a little longer to cook.
How long do you boil sweet potatoes for?
How long to boil sweet potatoes depends on whether they are whole or diced. Sweet potatoes diced into 1-inch cubes will take about 12-15 minutes to cook. In contrast, sweet potatoes chopped into 2-inch cubes will take about 15-20 minutes. Whole sweet potatoes can take 30 minutes or more to cook, depending on the size of the sweet potato.
