Vegans love Italian food too. Therefore, we created this Vegan Mushroom Risotto to enjoy risotto without dairy products. We added sautéed mushrooms to give the risotto a meaty texture, garlic, onions, and fresh time for added flavor. This vegan mushroom risotto is cooked until al dente, gives you the perfect Italian vegan recipe.

Ingredients

  • 2 tablespoons Vegan Butter

  • 1 pound Mushrooms, sliced

  • 2 tablespoons Olive Oil

  • 1 small Onion, diced

  • 2 cloves Garlic, minced

  • 1 tablespoon Fresh Thyme

  • 1 1/2 cups Arborio Rice

  • 1/2 cup Dry Vegan White Wine

  • 5-6 cups Vegetable Broth

  • 1/4 cup grated Vegan Parmesan Cheese

  • 1 teaspoon Salt

  • 1/2 teaspoon Black Pepper

Instructions

Place the vegan butter into a deep skillet. Place it over a medium-high flame.

Add the button mushrooms and cook for 3-5 minutes until softened.

Remove the sautéed mushrooms along with their liquid and set them aside.

Add the olive oil to the pan.

Add diced onions and cook them for 2-3 minutes until softened and fragrant. Add garlic and thyme. Cook for 1 minute until fragrant

Stir in Arborio rice. Cook for 2 minutes, stirring often.

Add white wine and cook, often stirring until the wine evaporates.

Add 1/2 cup of vegetable broth and stir until it evaporates.

Cook for 15-20 minutes, adding the vegetable broth 1/2 cup at a time, constantly stirring until Arborio rice is al dente.

Add the vegan parmesan cheese and stir to combine.

Stir in the sautéed mushrooms. Stir in the salt and pepper to taste

Serve in plates and enjoy!
