Corn fritters are believed to have been created in the Southern United States, known for deep-frying foods. However, deep-fried corn fritters aren't the healthiest or vegan.

Luckily, you can make these Vegan Corn Fritters. They are shallow fried in a skillet using a few tablespoons of oil. The batter contains vegan and gluten-free ingredients, much healthier than traditional corn fritters.

Best of all, the corn fritters are easy to make. They are loaded with sweet corn and make the perfect appetizer, light lunch, or dinner.

The only thing that would elevate these corn fritters is a tasty dip sauce. Try our vegan tzatziki or our vegan tartar sauce for the best results. 

 

What are corn fritters made of?

Corn fritters are made with gluten-free all-purpose flour, yellow cornmeal, sugar-free sweetener, baking powder, salt, oat milk, vegan butter, corn kernels, and scallions. The corn fritters are fried in vegetable oil. 

 

Why are my corn fritters soggy?

The corn fritters may be soggy because the oil may not have been hot enough when you added the corn fritter batter. The fritters could also be soggy because you added too many fritters to the skillet at once. 

 

What is the difference between corn fritters and hush puppies?

Corn fritters resemble fried cakes. The batter is thick and contains corn kernels in every bite. In contrast, hush puppies are made with cornmeal and flour. They do not contain corn kernels. 

 

How do you keep fried fritters crispy?

Place the patties on a wire rack set over a baking sheet. The oil will drip down from the cakes, but they will not get soggy. If you place the cakes on a paper towel-lined plate or foil, the patties will steam and get soggy.

Ingredients

  • 1 tablespoon Ground Flaxseed 

     

  • 3 tablespoons Water 

     

  • 1 cup Gluten-Free All-Purpose Flour 

     

  • 1/4 cup Finely Ground Yellow Cornmeal

     

  • 1/4 cup Granular Sugar-Free Sweetener

     

  • 1 tablespoon Baking Powder

     

  • 1/2 teaspoon Salt

     

  • 3/4 cup Unsweetened Oat Milk 

     

  • 1 tablespoon Vegan Butter, melted

     

  • 1 15-oz can of Corn Kernels, drained

     

  • 3 tablespoons Scallions, minced 

     

  • 1/4 cup Canola Oil for frying

Instructions

Place the ground flaxseed and water into a small bowl and mix to combine. Let the flaxseed mixture sit for 5 minutes until it thickens. 

 

Prepare the flaxseed

Place the gluten-free all-purpose flour into a fine-mesh strainer set over a large mixing bowl.

Add the cornmeal, sugar-free sweetener, baking powder, and salt and whisk to combine. 

 

Adding other dry ingredients

Add the flaxseed mixture, oat milk, and vegan butter to the dry ingredients. Whisk until smooth.

Fold in the corn kernels and scallions until combined.

Place 2 tablespoons of vegetable oil into a large non-stick skillet and set it over medium-high heat. 

 

Pre heat the frying pan

Using a 1/4 measuring cup, pour 3–4 portions of the corn fritter batter into the skillet.

Cook the corn cakes for 2–3 minutes until golden brown; flip the corn fritters over, and cook them for another 2–3 minutes until golden. 

 

Cooking the Vegan Corn Fritters

Remove the corn fritters from the skillet, transferring the fritters onto a plate lined with paper towels.

Repeat steps 6-9 until all the corn fritter batter is gone.
