Ingredients

Fried Salmon
  • 4 Salmon fillets - cut into bite sized pieces

  • 2-3 Eggs

  • 3/4 cups Arrowroot Flour/ Starch

  • 1 tablespoon Chinese 5 Spice

  • Oil For frying

Fried Rice
  • 1 1/2 cups Jasmine Rice - Precooked 1 day before

  • 2 tablespoons Peanut Oil

  • 1 thumb Ginger - minced

  • 1 large yellow Onion - diced

  • 3 cloves Garlic - minced

  • 1 teaspoon Sesame Oil

  • 3 tablespoons Soy Sauce

  • 3 Seasoning Peppers

  • 3 Sweet Peppers - Green, Yellow, Orange - diced

  • 3 Chinese Celery Stalks - diced

  • 1 small Carrot - diced

  • 1/4 head Cabbage - chopped

  • 2 Green Onions chopped

  • 2-3 Eggs

Instructions

Salmon Frying

In a large bowl, mix the arrowroot flour and Chinese 5 spice seasonings, using a whisk.

In a medium bowl, beat the eggs.

Prepare a deep skillet with oil at 350 F/ 176 C.

Prepare a drying rack or plate with paper towels as your drying station for when the fish finishes frying.

Coat the fish in the beaten eggs, then dredge with the flour, making sure to cover the entire filet and shake off any excess.

Carefully place the hot oil to fry for 4-5 minutes, then remove to the drying station. Make sure not to put too many pieces in the pan at the same time.

Continue until all pieces of salmon are cooked, then set aside till later.

Fried Rice

Add the Peanut oil and coat the pan using a Wok or large deep skillet on medium-high heat.

Once the oil is hot, add the ginger, onion, garlic, and sauté for 3-5 minutes.

Add the rice, tossing and mixing with the other ingredients for 2-3 minutes.

Add the sesame oil and soy sauce and mix thoroughly until the rice has turned brown.

Now move everything to the outside edges of the wok or skillet to make a hole in the center to add the vegetables, cook for 3-5 minutes, then mix everything.

Add the pieces of fried salmon, toss and mix for another 3-5 minutes.

Remove from the heat and serve hot with a sprinkle of green onion on top.

Egg Option

Beat the eggs together in a bowl.

After step five, repeat step 5 by step with the eggs by adding them to the center of the pan and scrambling to cook for 2-3 minutes or until the eggs are cooked, then mix with everything else.
