Oreos, cheesecake, and brownies? What a perfect combination! They're extra- chocolatey, containing semi-sweet chocolate and unsweetened cocoa powder. Best of all, these Oreo cheesecake brownies are gluten-free. Serve these Oreo Cheesecake Brownies with ice cream, or if you are looking for a chocolaty beverage, serve the brownies with chocolate tea or keto hot chocolate. Ingredients

Brownie:
  • Non-Stick Cooking Spray

     

  • 1/2 cup Butter

     

  • 7 ounces Semi-Sweet Chocolate (53% cacao), chopped

     

  • 10 tablespoons Gluten-Free All-Purpose Flour

     

  • 2 tablespoons Unsweetened Cocoa Powder

     

  • 1 teaspoon Instant Coffee 

     

  • 1/4 teaspoon Salt

     

  • 3/4 cup Granulated Sugar Substitute

     

  • 2 large Eggs

     

  • 1 teaspoon Vanilla Extract

     

  • 16 Gluten-Free Oreos

Cheesecake:
  • 12 ounces Cream Cheese, softened

     

  • 6 tablespoons Sugar-Free Sweetener



     

  • 1 teaspoon Vanilla Extract

     

  • 1 large Egg 

     

  • 6 Gluten-Free Oreo Cookies, roughly chopped

Instructions

Brownie:

Preheat your oven to 350 °F. Line a 9 by 9-inch baking pan with foil. Make sure you let the foil hang over the sides of the pan for easy removal. Spray the foil with non-stick cooking spray and set it aside. 

 

Prepare baking pan

Place the butter and chocolate into a medium pot, and place it over low heat. Cook for 5 minutes, constantly stirring until the butter and chocolate melt.

Remove the chocolate mixture from the stove and let it cool for 10 minutes.

Whisk the gluten-free all-purpose flour, cocoa powder, instant coffee, and salt in a small bowl and set aside.  

 

Prepare dry ingredients

Whisk the sugar substitute into the chocolate mixture.

Whisk the eggs into the chocolate mixture one at a time until well combined.

Next, add the vanilla extract and mix until well combined.

Add the gluten-free mixture to the chocolate mixture and fold it in using a silicone spatula.

Pour the chocolate mixture brownie batter into the prepared pan. Spread it into an even layer.

Place the Oreos on top of the chocolate mixture and set aside.

Cheesecake:

Place the softened cream cheese into a medium bowl. Beat it with an electric hand mixer for 1 minute until it is smooth. 

 

Prepare cream cheese

Add the sugar-free sweetener and vanilla extract and mix until well combined.

Next, add the beaten egg and mix until well combined.

Add spoonfuls of the cream cheese mixture on top of the chocolate mixture. 

 

Add cream cheese to the chocolate mixture

Sprinkle the chopped Oreos on top of the cream cheese mixture. 

 

Add chopped Oreo to the cheesecake

Bake for 35-40 minutes until the edges of the brownie pull away from the edges of the baking pan. 

 

Baking the Cheesecake

Place the Oreo cheesecake brownie on a wire rack. Let cool for at least 1 hour. 

 

Cooling the Cheesecake

Cover the Oreo cheesecake brownie with foil and place it in the fridge for 3 hours. 

 

Resting the Cheesecake into the fridge

Remove the Oreo cheesecake brownie from the pan and slice it into 12 portions.
