Ingredients

  • 4 Russet Potatoes, washed, scrubbed, and dried

  • 2 tablespoons Olive Oil

  • 1 teaspoon Salt

  • 1/2 teaspoon Black Pepper

  • 1/4 cup cooked Bacon (optional)

  • 1/4 cup Parmesan Cheese (optional)

  • 2 Scallions, green parts only, sliced thinly (optional)

Instructions

Trim any blemishes from the potatoes using a paring knife and set them on a cutting board.

Prick each potato with a fork 4-5 times on both sides. Piercing the potatoes allows steam to escape and prevents the potatoes from exploding in the microwave.

Drizzle the potatoes with olive oil and sprinkle them with salt and pepper. Rub the potatoes to coat them in the oil and seasoning.

Place the russet potatoes onto a microwave-safe plate and heat it for 7 minutes. Turn the potatoes over using a pair of tongs and cook them for an additional 7 minutes.

Remove the potatoes from the microwave using oven mitts. The plate will be extremely hot, and you do not want to burn your fingers.

The baked potatoes are done when they can easily be pierced with a fork or paring knife. The fork or knife should slide to the center of the potato with ease.

If the potatoes are not done, continue heating them in the microwave at 1-minute intervals until the potatoes are tender and cooked through. Remember to remove the potatoes with oven mitts. Let the baked potatoes cool for 2 minutes.

Place the potatoes onto a serving platter and cut open each potato with a sharp knife. Give each potato a gentle squeeze to open it.

Top with bacon, Parmesan cheese, and scallions if desired before serving.
