Instructions

Grilled Chicken Breast
Preheat the grill to medium-high heat, allowing it to heat up fully. 
Add the chicken breast to a bowl or plate, coating the chicken with the oil, salt & pepper. 
Spray the grill with the cooking spray, add the chicken to the grill placing the top side of the breast down. 
Grill for 2-3 minutes before giving the chicken breast a quarter of a turn, using a pair of kitchen tongs, making a cross-hatch pattern and cooking for an additional 2-3 minutes. 
Flip the chicken breast over, repeating the process on the other side.
To check if the chicken is fully cooked, a kitchen thermometer should read 165 degrees Fahrenheit when placed into the thickest part of the breast. If you aren't stocked with a thermometer in your kitchen, make a small cut into the thickest part of the chicken breast, using a paring knife. The meat shouldn't have any pink inside, and the juices should be running clear and not red.

Add the mixed greens into a mixing bowl, tossing the salad with carrot ginger dressing.
