Chicken Alfredo, comfort food to many because of its nuggets of chicken coated in a creamy nutty and cheesy sauce that coats your mouth and warms the soul. This recipe will show you how to make this iconic dish into a Low-Carb chicken Alfredo that the entire family will love. Instead of using heavy cream, we have chosen to use a combination of silken tofu and soy milk to create a protein-packed cream sauce that is great for absorbing flavors and makes this dish dairy-free. Ingredients

  • 2 tablespoons Extra Virgin Olive Oil

  • 4 Boneless Chicken Breast - cut into bite sized pieces

  • 3 cloves Garlic - minced

  • ½ teaspoon Basil - dried

  • 1 teaspoon Oregano - Dried

  • 125 grams Soft Silken Tofu

  • 125 ml Soy Milk

  • 1/4 cup Parmesan Cheese - finely shredded

  • Salt & Black pepper to taste

Instructions

Season the chicken with garlic, basil, and oregano and set aside.

Using a large deep skillet, add the oil and medium-high heat.

Once the oil is hot add the chicken and sauté for 5 minutes.

While the chicken is cooking, place the tofu and soy milk into a high-powered blender and process until a thick creamy texture. Add more milk if necessary

Add the cream to the pan, mix with the seasoned chicken, reduce the heat to medium and cook for 3-5 minutes.

When the sauce starts to simmer, stir in the cheese using a whisk until thoroughly combined.

Season with salt and black pepper and serve warm in plates
