Instructions

Sauce
Using a large deep skillet, place the oil in the pan and bring it to medium-high heat.
Once the oil is hot, add the onion and garlic and sauté for 3 minutes.
Mix and mash in the tomatoes, seasoning, vinegar, and simmer for 5 minutes, season with salt and pepper. Remove from the heat and spread into the baking dish.
Cabbage Leaves
Using a large stockpot filled with ⅔ of water, season with 1 teaspoon of salt, then place on a high heat and bring to a boil.
Cut out the core of the cabbage using a small knife and work around the stem, then place it into the pot of boiling water for 3-5 minutes or until the leaves begin to wilt.
Remove the cabbage from the pot and place it into a colander under running water, and once it’s cool to the touch, carefully peel off the leaves of the cabbage, trying to keep them in tack as much as possible.
Cauliflower Rice
Place the cauliflower florets into a food processor or use a box grater to process them into a rain or rice like texture.
Spread them out onto a towel and wring out any excess water then set aside for use in the filling
Filling, Rolling & Baking
Preheat the oven to 400 °F/ 204 °C, place a rack in the middle and prepare a baking dish by brushing some oil inside or using non-stick spray.
Mix the filling ingredients together until all the seasonings are evenly dispersed, and all ingredients are thoroughly combined then divide into 12 - 15 equal portions depending on the number of leaves you have.
Take one blanched cabbage leaf and place a portion of the filling mixture onto the concave end of the leaf then proceed to roll the filling in the leaf and stop when you are halfway up the leaf now fold in the sides and finish rolling until you reach the end.
Place the rolls seam side down in the baking dish of sauce and continue filling and rolling until all are complete.
Once all the rolls are prepared and in the dish cover and place into the oven to bake for 30-45 min then serve warm.
