Ingredients

Crust
  • 150 grams Almond flour

  • 50 grams Chickpea flour

  • 1 Egg, large - beaten

  • 100 grams unsalted butter - softened

  • ½ teaspoon Celery salt

Quiche filling
  • 6 Slices Butcher cut bacon - chopped

  • 2 Green Onions - chopped

  • 3 cloves Garlic - minced

  • 2 cups Spinach - chopped

  • 1/2 cup Heavy Cream

  • 4 Eggs Large - beaten

  • 100 grams Sharp Cheddar Cheese, grated

  • Salt & Black Pepper to taste

Instructions

Crust

Preheat oven to 400 °F/ 204 °C, place a rack in the center of the oven and prepare the 9-inch pie dish with nonstick spray. If you omit the pie crust, prepare your dish with nonstick spray and follow the instructions accordingly.

Place the flours, beaten egg, butter, and Celery salt into a bowl and knead into a ball of dough, then let rest for 5 minutes.

After the dough has rested, press the dough into the greased 9-inch pie dish, bake for 10 minutes, then remove from the oven and let cool until ready to add the Quiché filling.

Quiche Filling

While the pie crust is baking, cook the bacon in an skillet on medium-high heat for 5 minutes or to your preferred crispness, then place on a paper towel or rack to drain the excess oil.

Using the same skillet add the green onions, garlic, and spinach and sauté for 5 minutes then remove to a bowl and let cool for 10 minutes.

Once the bacon and seasoned spinach mixture are cooled, mix them together in a large bowl with the heavy cream, beaten eggs, and cheese.

Pour the mixture into the pre-baked pie crust and bake at 325 °F/ 163 °C, for 45 minutes or until the Quiché is set and golden brown.

Remove from the oven and let cool, sprinkle with salt and pepper to taste, and serve warm or chilled as you prefer.
