Instructions

To a skillet over medium heat, add butter. 
Once hot, add onion, jalapeño, and cumin. Sauté for four minutes.
Add garlic and sauté for thirty seconds.
Add salt, cream cheese, heavy cream, and water.
Cook over medium heat, frequently stirring for about five minutes.
Lower heat to low, and add cheddar cheese and Monterey Jack cheese, by handfuls, whisking constantly with a stainless steel whisk.
Serve with your favorite low-carb veggies, pork rinds, keto crackers, or keto tortilla chips.
