But just like regular Queso Dip, this dip is extra-cheesy. That's because we're using three kinds of cheeses: cream cheese, cheddar cheese, and Monterey Jack cheese. The jalapeño adds excellent heat, and the cumin adds extra Mexican flavors. Serve with Classic Bakes Keto Crackers or our Keto Tortilla Chips Recipe, your favorite low-carb veggies and pork rinds.
- 2 tablespoons Butter
- 1 medium Onion, minced
- 1 medium Jalapeño, minced
- 1 teaspoon Cumin
- 3 cloves Garlic, minced
- 1/2 teaspoon Salt
- 8 ounces Cream Cheese
- 3/4 cup Heavy Cream
- 1/4 cup Water
- 8 ounces Cheddar Cheese, shredded
- 4 ounces Monterey Jack Cheese, shredded
Once hot, add onion, jalapeño, and cumin. Sauté for four minutes.
Add garlic and sauté for thirty seconds.
Add salt, cream cheese, heavy cream, and water.
Cook over medium heat, frequently stirring for about five minutes.
Lower heat to low, and add cheddar cheese and Monterey Jack cheese, by handfuls, whisking constantly with a stainless steel whisk.
