Man, oh man, is this keto French Onion Soup is delicious. To make this keto recipe, we sautéed onions until they were golden and caramelized to enhance their sweet flavor, then added beef broth to give the soup its classic brown color. We took this keto recipe further by slathering thick slices of keto French bread with butter and toasting them until golden brown. These toasts are added to each bowl of keto French onion soup, topped with a layer of Gruyère cheese, and melted in the oven.

Ingredients

Soup
  • 2 tablespoons Butter

  • 3 sliced Yellow Onions

  • 3 cloves Garlic, grated

  • 1 cup Water

  • 3 cups Beef Broth

  • 1/4 cup Dry White Wine 

  • 1 tablespoon Fresh Thyme

  • 1 Bay Leaf 

  • 1/4 teaspoon Cayenne Pepper

  • 1 teaspoon Worcestershire Sauce

  • 1 teaspoon Salt

  • 1 teaspoon Black Pepper

  • 1 keto French bread baguette, sliced

Instructions

Soup

Place butter in a large soup pot and place it onto a medium-low flame. Melt butter. 

Add onions and cook for 30-60 minutes until caramelized. Stir often to prevent onions from sticking to bottom of soup pot.

Add grated garlic and cook for a minute. 

Add white wine. Cook for 3-4 minutes until most of the wine is evaporated.

Add the water, beef broth, thyme, bay leaf, cayenne pepper, and Worcestershire sauce and cook for 20-30 minutes. 

Topping

Meanwhile, preheat oven to 350 °F. Arrange the keto French bread on baking sheet. With a pastry brush, brush both sides of the French bread with butter.

 

Bake French bread for 4-5 minutes in preheated oven. Turn bread over. Cook for another 4-5 minutes.

Set oven to broil. Divide the French onion soup between 8 heat-safe clay bowls. 

Place a slice of keto French bread on the top of each bowl of soup and add 2 tablespoons of Gruyère cheese on top.

Broil the French onion soup for 1-2 minutes until Gruyère cheese melts.
