The king of breakfast, the all-mighty omelet

This feel-good Keto Chorizo Omelet will fill you up & get you ready to face the day. The perfect match to the bold flavors of chorizo is caramelized onions, red bell peppers, tomatoes, Manchego cheese & spinach with a side of olive oil drizzled avocado topped with Maldon sea salt.

Traditional chorizo is made primarily of pork. However, it can also be found made from beef, chicken, and even plant-based. The healthy spices in chorizo that make up the unforgettable flavors of chorizo are smoked paprika, chili powder, cumin, garlic, onions, cinnamon & cloves. 

Whisk this omelet up for breakfast, lunch, or a quick dinner.

Ingredients

  • 3 Whole Medium Organic Eggs

  • 1 tablespoon Heavy Cream

  • 1/4 Yellow Onion, julienne 

  • 1/8 Red Pepper, julienne 

  • 4 Cherry Tomatoes, halved 

  • 1 cup Fresh Spinach 

  • 1/4 cup Ground Chorizo, if not available remove casing from a whole chorizo sausage 

  • 1/4 cup Manchego Cheese, shredded 

  • 1 teaspoon Olive Oil

Instructions

In a small bowl, whisk eggs, cream & a pinch of salt together and set aside

Heat a medium-sized nonstick pan to medium high heat and sear off the sausage until golden brown and oils have released 

Add onions, tomatoes, and red peppers to the pan & sauté with the chorizo for 5 more minutes until the pan is dry. 

Turn off the heat and add in the spinach to wilt and mix with the chorizo ingredients. Set aside for the omelet filling 

Using another nonstick pan heat to high heat on the stovetop, add oil to heat, add in the egg mixture stirring with a rubber spatula until eggs are starting to set. Turn off heat and add filling and cheese. 

Fold omelet into a half-moon shape & slide gently onto a plate. Good morning & Bon appetite!
