Place a large deep skillet on medium heat with 1 tablespoon of oil, and once the oil is hot, add the sliced beef and sauté for 3 minutes using a pair of tongs to rotate and brown the meat. Remove from the pan and set aside.
Add another tablespoon of oil and the mushrooms and sauté for 3 minutes allowing the water from the mushrooms to evaporate. Add the onions and sauté for 2 more minutes before adding the garlic to the pan. 
Add the beef back to the pan along with the red pepper flakes, chopped thyme, beef stock, worcestershire sauce, heavy cream and simmer for 3 minutes before stirring in the Dijon mustard and sour cream. 
Season with salt and black pepper & thoroughly combine everything together, remove from the heat add the chopped parsley and serve warm on a plate with your choice of Keto- friendly sides.
