Instructions

Press sauté button on Instant Pot, then add olive oil. Once hot, add onion and garlic and sauté for about 3 minutes.

Add carrots, zucchini, and celery, and sauté for 2 minutes.

Add diced tomatoes and tomato sauce, then press the keep warm button.

Add red kidney beans, cannellini beans, low-sodium vegetable broth, bay leaf, Italian seasoning, salt, pepper, and shell pasta. Stir well.

Secure the Instant Pot lid and set it on High for 6 minutes.

Quickly release the Instant Pot, then serve hot. Garnish with parsley.
