Cooking Coconut Rice in the Instant Pot is super easy. Rice usually takes about 20-30 minutes to cook. However, the instant pot takes cooks rice in half the time. So it only takes about 10-15 minutes. 

Coconut rice, fresh shallots, garlic, chili pepper, and thyme are sautéed until fragrant to make this instant pot. Of course, this coconut rice would not be complete without coconut flavor, so we added full-fat coconut milk. The vegetable broth helps the rice absorb the coconut milk. We also added kidney beans so that you can get all of your plant-based protein on your vegan diet. Kidney beans also contain several antioxidants, vitamins, and minerals that are beneficial for weight loss. Nutrients found in kidney beans may also support colon health and manage blood sugar levels.

In a fine-mesh strainer, add rice. Rinse the Jasmine rice with cold running water until the water runs clear to remove some starch from the rice.
To an instant pot, add olive oil. Press sauté
Once the oil is hot, stir in the diced shallots and cook for 2 minutes until translucent.
Add the garlic, ginger, chili pepper, and thyme and cook for 1 minute until fragrant.
Add Jasmine rice, coconut milk, vegetable broth, bay leaves, kidney beans, salt, and sugar, and stir to combine.
Seal the instant pot and select the rice button. The coconut rice should take about 10-15 minutes to cook, depending on your instant pot.
Once the coconut rice is cooked, let the steam from your instant pot release naturally for at least 15 minutes.
Remove the instant pot's lid and fluff the rice.
Remove the bay leaves from the coconut rice and stir in the lime juice.
