Fried Ochro or Okra is an excellent snack or side dish to accompany any meal such as Sada Roti. This recipe shows you how to get a nice crispy crunch texture from the ochro/okra with each bite. So the next time ochro/okra is in season, give this dish a try.

For crispy crunchy Ochro/ Okra please prepare a minimum of 1-2 hours or overnight before the cooking process. However if you do not like your Ochro/ Okra crispy crunchy omit step 2.
Wash and remove the tips and ends of each ochro before cutting into thin circular slices about 1/4 of an inch thick.
Layout the slices evenly on a baking tray and sit and dry out either in direct sunlight for 1-2 hours or overnight on the counter.
In a large deep sauté pan, add 4 tablespoons of oil and warm at medium to high heat.
Once the oil is hot, place the ochro/okra into the pan and allow it to cook without tossing or stirring for 10-15 minutes or until golden brown.
When the ochro/okra is golden brown, add the onion, garlic, and seasoning peppers tossing and stirring with a spatula to mix all ingredients.
Allow the vegetables to cook for another 10-15 minutes until the garlic is golden brown.
Try to avoid burning the ochro/okra and remove it from the heat just before this happens.
Serve with Sada Roti, crackers, or as a side dish with a meal.
