Instructions

Tuscan Chicken
To a 12-inch skillet, add butter. Let it melt over medium-high. Season chicken breasts with salt and pepper.   
Add chicken to skillet and cook it for 3-5 minutes per side until golden brown. Place the chicken into the crockpot.
Add onions and celery to the skillet the chicken was seared in and cook it for 3-5 minutes until the onions are translucent.   
Stir in minced garlic. Cook for 1 minute until fragrant.   
Add the white wine and use your cooking spoon to scrape the browned bits off the bottom of the pan. Cook for 2 minutes until most of the white wine evaporates. Add the sautéed aromatics to the crockpot.   
Add the mushroom stems and pieces, sun-dried tomatoes, thyme, and Italian seasoning to the crockpot.
Alfredo Sauce
To a large skillet, add butter. Melt over medium-high heat.   
Add cream and cook for 5 minutes until it starts to thicken. Whisk in Parmesan cheese until it is melted. Remove the Alfredo sauce from the stove and pour it over the chicken in the crockpot.   
Cook the Tuscan chicken for 4 hours on low until the chicken has a temperature of 165 °F.   
Add the spinach and 1/4 cup Parmesan cheese and cook the Tuscan chicken for an additional 5 minutes.   
Serve the Tuscan chicken with keto spaghetti noodles if desired.
