If you're looking to change up your ordinary chicken dinner with some bold flavors, try this recipe for Creamy Dijon Chicken. Dijon's solid, tangy, and sharp taste made into a creamy sauce makes this dish a great way to spice up a meal. We've added some salty chunks of ham mixed with the earthy, slightly bitter flavor of kale and topped it all off with some nutty Parmesan cheese. This dish goes great over some pasta, steamed rice, quinoa, or roasted potatoes.

Ingredients

  • 6 Chicken - boneless breast or thighs

  • 1 cup Cubed Ham

  • 1 tablespoon Extra Virgin Olive Oil

  • 1 tablespoon Unsalted Butter

  • 1 tablespoon Green Seasoning

  • 1 medium yellow Onion - diced

  • 3 cloves Garlic - minced

  • 2 teaspoons Italian seasoning

  • 100 ml Chicken Broth

  • 300 ml Plain Yogurt

  • 2 tablespoons Dijon Mustard

  • 1 cup Kale - chopped

  • 1/4 cup Parmesan cheese - grated

  • Salt & Black Pepper to taste

Instructions

Cut the chicken into bite-size chunks and marinate in green seasoning in a container for at least 1 hour longer for a richer flavor.

Using a large deep skillet, add the oil and bring to medium-high heat.

Once the oil is hot, add the chicken with the green seasoning and sauté for 10 minutes or until fully cooked, then remove from the pan using a pair of tongs, set aside to add in later.

Add the cubed ham to the skillet, sauté until golden and crispy, then remove from the pan and place with the cooked chicken and set aside for later.

Add the butter, onion, and garlic to the pan and sauté for 2-3 minutes.

Mix in the chicken broth and Italian seasoning and bring to a simmer for 3 minutes.

Add the yogurt and mustard, stir the mixture until thoroughly combined, and then reduce the heat to low and simmer for 3 minutes.

Once the mixture is simmering and thick, mix the cheese until fully incorporated, then season with salt and pepper to taste.

Stir in the kale, chicken, and ham, then simmer for 3-5 minutes or until the kale starts to wilt.

Once the kale is wilted, remove it from the heat and serve warm.
