Everyone needs a little pick-me-up to get things going in the morning, and these Coconut Waffles are the perfect pick-me-up to get your morning started. They are moist, fluffy, crispy, and bursting with coconut flavor. The waffles are made with coconut flour, coconut milk, and coconut oil for an explosion of coconut flavor. Unsweetened coconut flakes are also folded into the waffle batter, so every bite has a sweet coconut flavor. Serve these coconut waffles with a sprinkling of coconut flakes, sugar-free maple syrup, or anything you desire. I guarantee these coconut waffles will become your new favorite waffles.

To make waffles with coconut flour, combine almond flour, coconut flour, baking powder, sugar-free sweetener, salt, eggs, coconut milk, coconut oil, and unsweetened coconut flakes. Cook the waffles in your waffle iron according to the manufacturer's instructions. 

 

Can you use coconut oil on a waffle maker?

Yes, you can brush your coconut oil. The coconut oil will give the waffles a crispy exterior. However, melt the coconut oil before you touch your waffle iron.

Ingredients

  • 3/4 cup Rice Flour 

     

  • 1/2 cup Almond Flour 



  • 1/2 cup Coconut Flour 



  • 3 tablespoons Sugar-Free Sweetener 

  • 1 tablespoon Baking Powder

  • 1/2 teaspoon Xanthan Gum

  • 1/4 teaspoon Salt 

  • 3 large Eggs

  • 1 3/4 cups Coconut Milk 

  • 6 tablespoons Coconut Oil, melted 

  • 3/4 cup Unsweetened Coconut Flakes, plus more for garnish 

Instructions

Preheat the waffle iron. 

 

Prepare waffle maker

Whisk the rice flour, almond flour, coconut flour, sugar-free sweetener, baking powder, xanthan gum, and salt in a large bowl until combined. 

 

Mixing dry ingredients

Whisk the eggs into a medium bowl, add the coconut milk and melted coconut oil mix until combined.

Add the wet mixture to the dry almond flour mixture and stir just until combined.

Fold in the unsweetened coconut flakes.

Coat your waffle maker with non-stick cooking spray.

Add 1/3-1/2 cup of the waffle batter to the waffle iron and cook it according to the manufacturer's instructions.

Remove the coconut waffle from the waffle iron and place it onto a plate. Repeat steps 6 and 7 until there is no more waffle batter left.

Garnish the coconut waffles with more unsweetened coconut flakes if desired before serving.
