Preheat the waffle iron.   
Prepare waffle maker
Whisk the rice flour, almond flour, coconut flour, sugar-free sweetener, baking powder, xanthan gum, and salt in a large bowl until combined.   
Mixing dry ingredients
Whisk the eggs into a medium bowl, add the coconut milk and melted coconut oil mix until combined. 
Mixing wet ingredients
Add the wet mixture to the dry almond flour mixture and stir just until combined.

Fold in the unsweetened coconut flakes.

Coat your waffle maker with non-stick cooking spray.
