Carrot waffles are moist and so delicious. The waffles are made with almond flour, coconut flour, baking powder, salt, Greek yogurt, eggs, vanilla extract, spices, almond milk, and carrots. These carrot waffles are easy to make, and you can have breakfast on the table in 20 minutes. In your meal prep, you can even make a large batch of carrot waffles in advance and reheat the waffles in the toaster or microwave. This way, breakfast will be ready in a few minutes, and you'll be out the door on your way to work or school in no time. 

 

How do I cut carrots for waffles?

The carrots should be as cut as small as possible, so they melt into the batter, and you are not chewing on any large chunks of carrots. Therefore, it's best to peel the carrots and grate them using a cheese grater or food processor. 

 

How long to cook carrot waffles in waffle iron?

Each waffle iron is different, but it should take about 3–5 minutes to cook carrot waffles in a waffle iron. 

 

How to keep carrot waffles warm and crisp?

To keep your carrot waffles warm and crisp, place them onto a wire rack set on top of a baking sheet. Place the waffles into a 200° F oven, and they will stay warm and crispy until you are ready to eat.

 

What toppings do you put on carrot waffles?

You can add more freshly grated carrots, chopped walnuts or pecans, coconut, sour cream, cream, or maple syrup.

Ingredients

  • 2 large Eggs

     

  • 1/3 cup Plain Non-Fat Greek Yogurt 

     

  • 1/2 cup Almond Milk

     

  • 1 teaspoon Vanilla Extract 

     

  • 3/4 cup Almond Flour 

     

  • 1/4 cup Coconut Flour 

     

  • 2 tablespoons Sugar-Free Sweetener 

     

  • 1 1/2 teaspoons Cinnamon

     

  • 1/2 teaspoons Nutmeg

     

  • 1 teaspoon Baking Powder

     

  • 1/4 teaspoon Salt

     

  • 1/2 cup Carrot (1 large Carrot), grated

  • 1/3 cup (6 tablespoons) Unsalted Butter or Coconut Oil, melted

Instructions

How to

Preheat your waffle iron. Whisk the eggs, Greek yogurt, almond milk, melted butter or coconut oil and vanilla extract in a large bowl.

Whisk the almond flour, coconut flour, sugar-free sweetener, cinnamon, nutmeg, baking powder, and salt in a separate medium bowl until combined. 

 

Combine all the dry ingredients in a bowl using a whisk.

Mix the almond flour mixture into the wet ingredients until combined.

Fold the grated carrots into the waffle batter. If the carrot waffle batter is too thick, add 1–2 tablespoons of almond milk to loosen it up.

Next, spray your waffle iron with non-stick cooking spray. Place 1/4-1/2 cup of the carrot waffle batter and cook it according to the manufacturer's instructions.

Remove the carrot waffle from the waffle iron and place them onto a wire cooling rack. Continue cooking the carrot waffles until there is no more batter left.

Serve the carrot waffles with your desired toppings.
