Preheat the oven to 350 F. Toss the diced sweet potatoes in a bowl with olive oil, chili powder, salt and pepper. Add to a baking sheet to roast in the oven for 20 minutes until golden and cooked through.

Spread out 1 tablespoon of warm refried beans onto each shell, followed by the roasted sweet potatoes.
