Mix the ground pork, salt, fennel, paprika, black pepper, cayenne pepper, sage, garlic, and Italian seasoning in a large bowl until combined.
Shape the sausage mixture into 12 patties.
Preheat the air fryer to 390 °F for 5 minutes.
Place 4-5 sausage patties in the air fryer basket in an even layer and cook it for 4 minutes.
Turn the sausage patties over and cook them for another 4 minutes until a thermometer registers a temperature of 160 °F when inserted into a sausage patty.
Remove in the air fryer, and serve in a plate or bowl with your favorite side dish.
